OAT BOWL WITH FRUITS AND NUTS

   Ingredients:

  • 1/2 cup whole oats
  • 1 cup of milk (can be cow's milk, almond, soy, etc.)
  • 1/2 apple, cut into pieces
  • 1/4 cup chopped walnuts
  • 1 teaspoon cinnamon powder
  • 1 tablespoon honey or maple syrup (optional)

   Preparation:

  1. In a small saucepan, cook the oats with the milk over medium heat until creamy.
  2. Remove from heat and add apple, walnuts, cinnamon and honey, if desired.
  3. Mix well and serve hot in a bowl. You can add more fresh fruits on top if you prefer.

AVOCADO AND EGG TOASTS

   Ingredients:

  • 2 slices of whole wheat bread
  • 1 ripe avocado
  • 2 eggs
  • Salt and pepper to taste
  • Optional: sliced ​​cherry tomato, spinach leaves, crumbled feta cheese

   Preparation:

  1. Toast the bread in a toaster or in a frying pan.
  2. Meanwhile, cut the avocado in half, remove the stone and scoop out the pulp with a spoon. Mash the avocado with a fork in a small bowl and season with salt and pepper.
  3. Cook the eggs to your liking (scrambled, fried or poached).
  4. Spread the mashed avocado on the toast and place the boiled eggs on top.
  5. Add your optional ingredients if you wish and enjoy a delicious and nutritious breakfast!

Ingredients:

  • 2 eggs
  • 1/4 cup sliced ​​mushrooms
  • 1/4 cup chopped red pepper
  • 1/4 cup fresh spinach
  • 2 tablespoons chopped onion
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Optional: grated cheese, cherry tomatoes cut into halves

Preparation:

  1. In a bowl, beat the eggs and season with salt and pepper to taste.
  2. Heat the olive oil in a nonstick skillet over medium heat.
  3. Add the onions and peppers and sauté until tender, about 2-3 minutes.
  4. Add the mushrooms and spinach, and cook for another 2 minutes until the spinach is wilted.
