OAT BOWL WITH FRUITS AND NUTS
Ingredients:
- 1/2 cup whole oats
- 1 cup of milk (can be cow's milk, almond, soy, etc.)
- 1/2 apple, cut into pieces
- 1/4 cup chopped walnuts
- 1 teaspoon cinnamon powder
- 1 tablespoon honey or maple syrup (optional)
Preparation:
- In a small saucepan, cook the oats with the milk over medium heat until creamy.
- Remove from heat and add apple, walnuts, cinnamon and honey, if desired.
- Mix well and serve hot in a bowl. You can add more fresh fruits on top if you prefer.

AVOCADO AND EGG TOASTS
Ingredients:
- 2 slices of whole wheat bread
- 1 ripe avocado
- 2 eggs
- Salt and pepper to taste
- Optional: sliced cherry tomato, spinach leaves, crumbled feta cheese
Preparation:
- Toast the bread in a toaster or in a frying pan.
- Meanwhile, cut the avocado in half, remove the stone and scoop out the pulp with a spoon. Mash the avocado with a fork in a small bowl and season with salt and pepper.
- Cook the eggs to your liking (scrambled, fried or poached).
- Spread the mashed avocado on the toast and place the boiled eggs on top.
- Add your optional ingredients if you wish and enjoy a delicious and nutritious breakfast!

VEGETABLE OMELETTE:
Ingredients:
- 2 eggs
- 1/4 cup sliced mushrooms
- 1/4 cup chopped red pepper
- 1/4 cup fresh spinach
- 2 tablespoons chopped onion
- 1 teaspoon olive oil
- Salt and pepper to taste
- Optional: grated cheese, cherry tomatoes cut into halves
Preparation:
- In a bowl, beat the eggs and season with salt and pepper to taste.
- Heat the olive oil in a nonstick skillet over medium heat.
- Add the onions and peppers and sauté until tender, about 2-3 minutes.
- Add the mushrooms and spinach, and cook for another 2 minutes until the spinach is wilted.
- Pour the beaten eggs over the vegetables in the pan. Cook for a few minutes, occasionally moving the edges with a spatula so the raw egg moves to the bottom.
- When the egg is almost ready, add the grated cheese (if using) and the chopped cherry tomatoes.
- Fold the omelet in half and cook for a few more seconds until the cheese melts.
- Transfer the omelet to a plate and serve hot. Enjoy this delicious and nutritious way to start your day!
